In the mountains this summer, it will be mostly comfortable during the day. I typically wear a long sleeved tshirt with an extra layer handy for when the sun goes behind a cloud or for inside. In the evenings, the temperature will drop quickly as the sun goes down. You'll want to add at least a layer. In the evenings, it's common for me to wear a long sleeve tshirt (or two), a fleece and my jacket. I know that it sounds like you will need lots of clothes, but you don't. Layer and rewear is the key. The Quechua you will be working amongst have very, very few clothes and sometimes wear everything they own at the same time.
In Iquitos it's a totally different story. It won't be cold at all! You'll want short sleeves, lightweight pants, a light jacket. Guys, you may wear shorts, not a problem culturally. Ladies, life is a little different for you. If you want to bring shorts to wear within the confines of your room, that is not a problem, but culturally, it is not appropriate for you to wear them in public. Capris and lightweight skirts will be fine for something cooler to wear. You will want some warmer clothes for Lima. A fleece and some close toed shoes would be good.
